Recipe: Fresh Rocky Ford cantaloupe salsa

Brooke Proctor from Proctor Farms show us how to make cantaloupe salsa.

Fresh Rocky Ford Cantaloupe Salsa

Ingredients:
1 1/2 cups Rocky Ford cantaloupe, rind & seeds removed, diced
1/2 cup bell peppers, diced
1/2 cup red onion, diced
4 TBS fresh cilantro, chopped
2 TBS lime juice
1 Knapp’s Farm Market Anaheim chili, chopped
2 TBS olive oil
salt to taste

Method:
Combine all ingredients in a medium sized bowl. Taste and season with more lime or salt as needed. Cover and chill for at least half an hour. Serve with your favorite tortilla chips or on grilled whitefish/chicken breast/pork chop or burgers.
