How to grill a bison burger

Rich Singer from Ted’s Montana Grill has tips and recipes for grilling great bison burgers.

Canyon Creek Burger
·    When the bison is one temperature below what is desired, place 1 ½ oz. of grated Cheddar cheese on the center, domed. Place three pieces of medium-rare bacon on the grill to heat up to a medium-well temperature.
·    Crack the egg on to the cleanest portion of the 375° F grill
·    When the cheese is fully melted (generally 2 minutes) remove the dome. Place the following in order on the protein, 3 strips of bacon, and then the egg
·    Using a metal spatula, remove the protein from the grill, and place on the center of the toasted bottom bun/roll.
·    Spread, “coast to coast,” 1 Tbsp. of Blackberry Jam on top of the toasted bun
·    Spread 1 tsp. of diced jalapenos on the blackberry jam on the top bun
·    Place a golf ball-sized piece of parsley next to the burger

New Mexico Burger
·    When the protein is flipped after the third seasoning, place the green chile on the grill, skin-side-down
·    When the burger is one temperature below desired temperature on the ticket OR the protein (veggie burger or chicken breast) is 2 min away from completion, place 1 1?2 oz. of grated Pepper Jack cheese on the center of the protein, and dome the protein. Note: Based on the protein selection use the appropriate burger or chicken dome for the “cheesing” process.
·    After the “cheesing” call is made, while the protein is continuing to cook, a call is made for one order of ?French fries.
·    When the cheese is fully melted (generally 2 minutes), remove the dome, and lay the Anaheim chili ?across the protein. Note: For beef, bison and veggie burgers, fold the Anaheim chili into a “V-shape” when placing it on the burger. For Chicken New Mexico Sandwiches, the Anaheim chili is placed horizontally across the chicken breast.
·    Using a metal spatula, remove the protein from the grill, and place on the center of the toasted bottom bun/roll.
·    Place 2 oz. of guacamole in the center of the protein.
·    Spread, “coast to coast,” 1 tsp. of Spicy Tomato Jam on the top ?bun’s surface.
·    Place a golf ball-sized piece of parsley at the 5 o’clock position.
